Ingredient Notes
Here’s what you need to make it. Full amounts are in the printable recipe card below.
- Boneless chicken breasts — Look for smaller ones so they cook faster
- Red enchilada sauce — I use a can, but you can use homemade sauce if you have it.
- Cheese — I use a blend of cheddar and Monterey Jack, but you can use Mexican blend if you prefer.
- Spices — salt, pepper, garlic and cumin
How to Make Baked Enchilada Chicken
Basically, all you do is season some chicken, pour your favorite enchilada sauce over it, top with lots of cheese and bake until it’s done. You can top it off with avocados, guacamole, tomatoes, or whatever you want.
Serving Suggestions
I usually serve the chicken with a side of lettuce and tomatoes, plus the toppings. You can always add rice and beans for a heartier meal.
Recipe Tip
Lightly pound the chicken so the pieces are about the same size, if necessary.
Larger pieces will take longer to cook.
