This easy recipe for baked enchilada chicken has been a family favorite for years. It’s perfect when you are craving the taste of chicken enchiladas but don’t have the time or energy to make them! As bonus, this delicious dinner is low carb and done in about 30 minutes, with hardly any prep time, so it makes an easy weeknight meal.

Ingredient Notes

Here’s what you need to make it. Full amounts are in the printable recipe card below.

  • Boneless chicken breasts — Look for smaller ones so they cook faster
  • Red enchilada sauce — I use a can, but you can use homemade sauce if you have it.
  • Cheese — I use a blend of cheddar and Monterey Jack, but you can use Mexican blend if you prefer.
  • Spices — salt, pepper, garlic and cumin

How to Make Baked Enchilada Chicken

Basically, all you do is season some chicken, pour your favorite enchilada sauce over it, top with lots of cheese and bake until it’s done. You can top it off with avocados, guacamole, tomatoes, or whatever you want.

Serving Suggestions

I usually serve the chicken with a side of lettuce and tomatoes, plus the toppings. You can always add rice and beans for a heartier meal.

Recipe Tip

Lightly pound the chicken so the pieces are about the same size, if necessary.

Larger pieces will take longer to cook.

Baked Enchilada Chicken

Cook Time: 25 minutes
Total Time: 30 minutes
Servings: 4

Ingredients  

  • 4 boneless skinless chicken breasts
  • ½ teaspoon sea salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon ground cumin
  • 2 cups red enchilada sauce
  • 2 cups grated cheddar or Mexican blend cheese

Instructions 

  • Preheat oven to 375℉
  • Coat a baking dish with a thin layer of nonstick spray or olive oil
  • Pour half of the enchilada sauce on the bottom of the baking dish.
  • Add chicken to baking dish and season with salt, pepper, garlic powder and cumin
  • Sprinkle cheese on top of the chicken
  • Cover with remaining enchilada sauce and bake for 25 minutes or until chicken reaches internal temperature of 165℉ according to an instant read thermometer
  • Serve with sour cream, avocado slices, tomatoes, shredded lettuce or your favorite enchilada toppings

Total time depends on the thickness of the chicken. You can pound larger pieces with a meat mallet to an even thickness so they cook faster.
