Hi friends! I’ve got a super quick and super easy meal idea for you today. In my house, we’re big fans of both Mexican and Italian food, and this recipe for Easy Mexican Pizza combines the best of both worlds. And since you can use left over taco or burrito filling, it’s also very budget friendly too.  

So the next time you’re craving pizza, skip the delivery, and make this Mexitalian version instead!

Mexican Pizza recipe

I think I’ve told you before that my kids absolutely love burritos. Really, they’ll eat almost anything if I put it in a wrap. And, they pretty much feel the same way about pizza. So, when I was looking for quick and easy meals to make on weeknights, it just seemed natural to want to combine the two favorites into one fuss-free dinner.

And the best part is that you’re basically serving leftovers — with a tasty twist. You can use the same tortillas, salsa, cheese, meat and beans that were used to make the burritos and just kind of repurpose them. Just think of this meal as upcycling for foodies! Okay, maybe that’s a stretch, but you get the idea.

And the twist is that you also use a layer of mozzarella or provolone cheese and Italian spices to give this pizza a very unique flavor.

Ingredients for Mexican Pizza

  • About 2 1/2 cups of cooked ground beef and black beans, heated up
  • 3 large flour tortillas
  • 1 cup salsa ( you can use homemade salsa or your favorite brand.)
  • 9 slices provolone or mozzarella cheese
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1 tablespoon Italian seasoning
  • Parmesan cheese and diced tomatoes for garnish, if desired


Directions

Place tortilla on a large griddle on medium heat, and spread some salsa thinly on top.
Place 3 slices of mozzarella or provolone cheese over the salsa, and layer some of the shredded cheddar cheese on top.
Drop some of the meat and bean mixture over the cheese, and sprinkle the Italian seasoning and Parm over the meat.
Remove from heat when cheese is melted and the underside of the tortilla is slightly crisp and brown.
Place on a large plate, and top with tomatoes and additional garnish if desired.
Repeat with remaining tortillas and other ingredients.
Makes 3 large pizzas.

This Mexican pizza is definitely a family favorite. You get a bit of spice from the salsa, lots of ooey, gooey cheese, the classic combo of beef and beans, and the unexpected flavor of Italian spices at the end.

They only take a few minutes to make and about just as long to disappear — the kids love ’em!  

You can also add or subtract some ingredients to suit your own tastes.
