Hey friends! I think I have just become that mom. You know, the one who preaches one thing and does something different. How? Well, I had a cookie for breakfast today. Yep, I admit it. But it wasn’t just any cookie, and as cookies, go, it was fairly healthy. It had tons of protein, and it was pretty much gluten free. You see, I had one of these awesome Flourless Peanut Butter Sandwich Cookies for breakfast, and I enjoyed every little crumb!

My oldest is the peanut butter junkie in our house, and ever since we made a batch of gluten free peanut butter cookies last month, she’s been wanting to make sandwich cookies using the same recipe. It’s one of her bucket-list items before she goes off to school, and I’ve been indulging her like any good mom would! Besides, she has some great ideas!

So anyway, we made the sandwich cookies yesterday, and after I took the other kids to school, l came home and saw these babies waiting in the fridge — all alone and lonely. So, while I’m all about well-balanced breakfasts for the kiddos, I just couldn’t help myself. 

But then again, I don’t have to go to school, and like I said, I don’t regret a thing! I did, however, have an apple later, so all’s well.

The cookies themselves are made without wheat flour, so they’re basically gluten free. The filling contains powdered sugar, which does have a tiny amount of cornstarch in it, so just to be on the safe side, I’m labeling these tasty treats flourless cookies instead of gluten free.

Ingredients for Flourless Peanut Butter Sandwich Cookies


For the cookies

  • 2 cups creamy peanut butter
  • 2 eggs
  • 2 cups granulated sugar
  • 3 teaspoons unsweetened cocoa powder

For the filling

  • 1 cup creamy peanut butter
  • 1/2 cup powdered sugar

Directions

Follow these directions for Four Ingredient Peanut Butter Cookies.
While the cookies are cooling off, mix the powdered sugar and the peanut butter until mixture is smooth and creamy.
Spread a thin amount on the bottom of one cookie, and top with a second cookie to form a sandwich.
Enjoy!

It’s still warm here, so I’ve been storing the cookies in the fridge. But if it’s cool enough in your neck of the woods, you can easily keep these on the kitchen counter.

But, these cookie sandwiches are so tasty and so tempting that you may want to keep them out of sight, especially if you want to share them with your family or your lucky coworkers.

And they make great after school snacks!

These flourless peanut butter sandwich cookies are so light that they practically melt in your mouth. They’re not heavy at all, so you can enjoy them for dessert, snacks, or if you’re like me, you can nibble on one for breakfast.
