    Spring Cake Mix Cookies

    Easy Spring Cake Mix Cookies are soft, chewy and made with only 5 ingredients! They're perfect when you need a quick dessert for Easter or any spring gathering and simple enough for kids to make!

    Looking for a quick and easy spring dessert or tasty treat? You can't go wrong with these easy cookies made from a box of yellow cake mix. They're super soft, chewy and completely delicious!

    My two oldest kiddos were on spring break this past week, which was fun because I got to spend some quality time with just the two of them. Well, kind of. One of the girls spent as much time as possible catching up on her beauty sleep, but my oldest baby and I got a head start on our spring baking!

    As much as I love making cookies from scratch, making cookies from cake mix is so easy and convenient, especially when you want a quick dessert to satisfy that sweet tooth. And cake mix cookies are always thick, soft, chewy and so good.

    How do you make cookies from a cake mix?

    You only have to make a few easy adjustments to make cookies, instead of cake,  from cake mix. You basically reduce the liquid and the eggs, which results in a thicker batter. Then, you bake the dough just like you would for regular cookies.

    I used yellow cake mix for these spring cookies. And before we baked them, we topped them with some pastel candies.

    We also sprinkled some pastel colored sugar over the tops of the cookies. This is totally optional, but it gives the cookies a little bit of sparkle.

    You don't want to go crazy here -- Just add a little bit of sugar for a nice pop of color.

    Can you use any cake mix for cookies?

    Personally, I think cake mixes with added pudding make the best cake mix cookies, but really, you can use any cake mix for this recipe. Just use your favorite brand. You can use any flavor, too!

    And if you want to make ice cream sandwiches, cake mix cookies work incredibly well here. Oh, yes!

    Ingredients
      

    • 2 eggs
    • 1 box yellow cake mix
    • ⅓ cup coconut oil
    • 2 tablespoons milk
    • pastel m & m candies

    Instructions
     

    • Preheat oven to 350 degrees
    • In a large mixing bowl, add eggs, and beat slightly
    • Add the cake mix, coconut oil and milk, and mix until well combined. Batter will be thick.
    • Drop batter by rounded tablespoonfuls onto cookie sheets, and top with pastel candies 
    • Bake for 10 minutes or until cookies are slightly firm around edges  
    • Remove from oven, allow to cool slightly, then transfer to wire rack or plate to cool completely
