Make the best turkey croissant sandwich with sliced turkey breast, provolone cheese, fresh greens, dried cranberries and a hint of pepper jelly on a flaky, fresh croissant. Perfect for leftover turkey or deli meat!

I just love a good turkey sandwich. It’s pretty much my go-to for a quick lunch year round. If I’m in the mood for a hot sandwich, I’ll make a grilled turkey and cheese that is absolutely delicious.
But my absolute favorite is a cold turkey sandwich on a croissant with pepper jelly. A soft, fresh and flaky croissant. Add cheese and a few more toppings, and you have the best turkey croissant sandwich ever!
Why you’ll love this turkey sandwich

It’s made with fresh ingredients and packed with a blend of different flavors. This isn’t your ordinary sandwich!
From the soft, buttery croissant to the tangy tartness of pepper jelly and cranberries and the crunch of the micro greens, it’s honestly the best cold turkey sandwich I have ever had.

What You Need to Make it
Here’s a quick list of everything you need for this easy sandwich recipe. Full amounts are in the printable recipe card below.
- Fresh croissants — the fresher, the better. My second favorite bread is sourdough.
- Sliced turkey breast — Use deli meat or leftover Thanksgiving turkey
- Mayo — not Miracle Whip. Unless you love it. Regular mayonnaise won’t overpower the other flavors
- Hot pepper jelly — The blend of hot and sweet packs a real flavor punch here. I get mine from a local grocery store, but Trader Joe’s also makes a good one.
- Dried cranberries — Craisins or a generic version
- Provolone cheese — or your favorite cheese
- Fresh greens — I love using micro greens because they have tons of flavor. You can easily use lettuce if that’s what you have
- Sea salt — just a pinch to enhance the flavor
How to Make a Turkey Croissant Sandwich
First, slice the bread. Then, add mayo and the pepper jelly to the bottom piece. Top that with the dried cranberries, turkey slices and provolone. Add the micro greens and sprinkle sea salt on top. Enjoy!

Quick Tips
Slice the croissant so the bottom part is thicker than the top. This helps prevent the bottom piece from tearing.
I like to add the Craisins on top of the jelly so they stick and don’t fall out.

Variations
Arugula is a good substitute for the micro greens.
Cheddar cheese or American cheese or Havarti are great with turkey.
If you have bacon, definitely add some!
I’m not a fan of tomato on this sandwich, but you can add it if you like.
Chicken or ham will also work.
