This recipe for leftover turkey soup is perfect for the day after Thanksgiving, and it’s made entirely in the Instant Pot! If you’re looking for easy Instant Pot recipes to  make with your Thanksgiving leftovers, you’ll love this easy pressure cooker turkey soup recipe.

It’s basically a turkey carcass soup, since you make it with Instant Pot turkey stock made from the turkey carcass. Only instead of making the soup right away, I like to make the bone broth after Thanksgiving dinner and make the actual soup, using the bone broth, the next day.  You could definitely save the carcass and make the stock and soup at the same time, but I’ve always done it this way.

If you want to make turkey noodle soup, throw in some uncooked egg noodles after pressure cooking, and boil on the saute setting until they’re done. Or, you can serve the turkey soup with cooked noodles on the side. I usually do this since some of us prefer a soup without noodles and some are all about the noodles!l

What vegetables are good in turkey soup?

I like to keep my Instant Pot turkey soup as simple as possible. I start out  by cooking a blend of celery, onions and carrots — mirepoix — until they’re slightly soft. You can use olive oil or butter here, or fat from the refrigerated bone broth, if you haven’t skimmed that off the top yet.

Next, add the leftover turkey, the stock (bone broth),  and little water to thin it out. This is optional, but I usually add a little since the stock is so rich. Just make sure you’re under the 2/3 mark in the pot, and you’ll be fine.

What spices are good in turkey soup?

I love using herbes de Provence with whole chicken, so I also use it with turkey. So, just that and some sea salt and pepper is all it takes. Oh, I also usually throw in some celery leaves for extra flavor — just make sure to remove them before serving.

How long do you cook leftover turkey soup in the Instant Pot?

Since everything in this Instant Pot turkey soup is already cooked, you only have to pressure cook it for a whopping 5 minutes. As with all Instant Pot soup recipes, the pot does take several minutes to reach pressure, but you can use this time to relax, watch TV or whatever floats your boat!

Ingredients  

  • 1 cup baby carrots, sliced thin
  • 1 medium yellow onion, chopped
  • 2 celery stalks diced
  • 1 tablespoon olive oil
  • 2 cups cooked turkey, diced
  • 1 teaspoon sea salt
  • ½ teaspoon pepper
  • 1 teaspoon herbes de Provence seasoning
  • additional salt and pepper, to taste
  • 4 cups turkey stock (bone broth)
  • ¼ cup water

Instructions 

  • Hit SAUTE on Instant Pot, and when it reads, Hot, add the olive oil, carrots, celery and onion, and cook until slightly soft
  • Hit CANCEL to turn pot off, then add cooked turkey, turkey stock, water, salt, pepper and herbes de Provence
  • Place lid on Instant Pot, turn vent to Sealing position, and hit PRESSURE COOK for 5 minutes
  • Pot will take several minutes to reach pressure, then begin counting down and cook for 5 minutes and beep when done. Allow a 5 minute natural release (or longer) and do quick release for remaining pressure
  • When pin drops, remove lid, and stir. If you want to add noodles, add 2 cups uncooked egg noodles, hit CANCEL, then hit SAUTE, and cook until noodles are done.  You can also cook noodles separately and serve with soup.

Recipe was made in a 6-quart Instant Pot electric pressure cooker with this recipe for homemade Instant Pot Turkey Stock.  
You can use an 8-quart without changing the recipe.

    I tried this recipe tonight, it was scrumptious, I used chicken broth as that is what I had in the pantry. I did not add the salt as the chicken broth had plenty of sodium, I added 1/2 bag of frozen mixed vegies to it. My husband had a massive heart attack first part of August so have to watch the sodium. Again SCRUMPTIOUS

    Fabulous! A keeper! I did a few things differently: added ginger root which is a game-changer in chicken and turkey soups; added some chopped sweet potatoes; and added 1 can corn, drained. I didn’t have herbes d’Provence, unfortunately, so used Italian Seasoning. Oh! I didn’t have egg noodles so used Pad Thai Noodles which ended up being a wonderful substitution.5 stars

    I made this with chicken broth because I didn’t have any turkey bone broth. I was easy and used up the carrots and celery I had. After it was in my bowl, I added celery salt to give it a little extra flavor.5 stars

    I had never tried the spice herbes de Provence before tonight….WOW…I am hooked on it now….My family loved my turkey soup and complimented the flavor! My husband bought me an Instant Pot 4 weeks ago after we had to evacuate due to the Camp Fire and were staying in a motel. I am in love with it much more the the Power Pressure Cooker ( which I had already). My 89 year old Mother was amazed that this soup was done in 10 minutes and I had her push the button…This soup will be made again….I can’t wait to try potato soup next…And I love all the pics and easy to understand instructions…my Mother is now going through your recipes to see which ones she wants to do….I am so excited for her…this is good therapy for her as she lost everything and is now living with my husband Jay and I.
