It’s the season for patriotic meals, and I have a super simple red, white and blue salad to share with you today. I picked up two small watermelons at the local market yesterday, along with some fresh, juicy blueberries and a package of feta cheese.
I love watermelon, but let’s face it — that stuff can be messy! For the kids, I find it usually works best to cut up the watermelon so that it can be easily devoured with a fork. Otherwise, watermelon juice is all over them, the chairs, floor, house — you get the idea.
But since we’re talking patriotic recipes today, I thought it would be cute to use a star cutter to make little watermelon stars. Then, I just added some blueberries and feta cheese.
Feta gives the salad a nice salty taste, and since I’m one of those people who loves salt on watermelon, I love the added feta! We also add it to other salads, as well.
If you’re not a feta fan, you could get the same look with mozzarella or another white cheese.
How To Make Watermelon Feta and Blueberry Salad
- 1 slices small watermelon cut into thin , with seeds removed
- 2 pints of blueberries rinsed
- 1 cup crumbled feta cheese
Use a small star-shaped cookie cutter to make watermelon stars from the sliced melon.
Add the watermelon and blueberries to a large serving bowl.
Sprinkle feta cheese over the salad, and mix in right before serving.
Isn’t this an easy salad recipe? The longest part of the whole deal is cutting the star shapes, but after that, it’s a breeze to assemble. You can easily make this watermelon, blueberry and feta salad ahead of time, and it’s perfect for any Fourth of July picnic or party. In fact, it’s great to enjoy all summer long!
