If you’re looking for an easy recipe for dinner tonight, this slow cooker Buffalo chicken sandwiches recipe is for you. I use my slow cooker year round, so even though this delicious recipe is perfect for game day during football season or basketball season, it also makes an easy weeknight meal for the whole family.
Buffalo chicken recipes can be spicy, but this easy crock pot recipe is actually on the mild side — similar to my crock pot honey Buffalo chicken sliders. It’s perfect if you’re not a fan of super spicy food.
You can try my Instant Pot Buffalo Chicken Dip, air fryer Buffalo Chicken wings, air fryer Buffalo chicken nuggets or grilled Buffalo Chicken sandwich if you like more spice.
Ingredients
You only need 4 ingredients for this easy recipe. These simple ingredients should be easy to find in your grocery store. Here’s a quick rundown, and you can find more details in the recipe card below.
- Boneless skinless chicken breasts — or use chicken thighs
- Dry ranch dressing mix — a packet of ranch dressing mix adds flavor without watering the sauce down
- Buffalo Sauce — I use Frank’s red hot for wings, but you can use regular red hot sauce for extra spice
- Butter — tones the spice down
- Sandwich buns — or slider buns for slow cooker Buffalo chicken sliders
How to Make Crock Pot Buffalo Chicken Sandwiches
First, spray the slow cooker with non stick spray to make clean-up easier. Then, place chicken on the bottom of the slow cooker.
Sprinkle the dry ranch seasoning mix on top of the chicken.
Next, pour 1 cup Buffalo sauce on top of the chicken. You can always add more sauce after shredding the chicken, but I like to start out with 1 cup.
Finally, place the butter on top of the sauce. You can skip the butter if you want, but we like the flavor.
It also helps keep the sauce on the mild side.
Cook Time
Place the lid on the slow cooker, and cook for 2-3 hours on high or 5-6 hours on low.
The total cooking time depends on the size and brand of slow cooker. My crockpot cooks fast, so I usually cook chicken for 2 hours on high.
Shred the cooked chicken using 2 forks or an electric mixer. I transfer the chicken to a large bowl, shred it with the electric hand mixer and transfer it back to the crock pot.
You can switch to low heat or the warm setting until you are ready to eat.
How to Serve Slow Cooker Buffalo Chicken Sandwiches
Pile the shredded Buffalo chicken between 2 brioche buns, soft hoagie rolls or sandwich buns.
Serve with your favorite toppings. We like extra Buffalo sauce, extra ranch dressing, lettuce, pickles and carrot sticks and celery sticks. Potato chips and French fries make good side dishes for spicy chicken sandwiches!
Add your favorite cheese slices. Mozzarella cheese, provolone cheese and cheddar cheese are great choices!
How to Store and Reheat
Store leftover crockpot Buffalo chicken in an airtight container in your refrigerator. It keeps for up to 4 days.
For longer storage, freeze shredded Buffalo chicken in a freezer bag for up to 3 months for best taste. It’s a great freezer meal for meal prep!
Recipe Variations
Try my Instant Pot Buffalo Chicken if you want a pressure cooker version of this recipe.
If you don’t want to use a packet of dry ranch dressing mix, use your favorite homemade ranch dressing and add some before serving. Use bleu cheese dressing or bleu cheese crumbles instead of ranch.
For creamier chicken, add 1 block of cream cheese. For spicier chicken, add a 12-oz bottle of Buffalo wing sauce.
Use smaller slider buns for crockpot Buffalo chicken sliders or make Buffalo chicken wraps with tortillas, instead. A lettuce wrap makes a delicious low carb option.
