This Sheet Pan Honey BBQ Chicken Dinner with carrots and roasted potatoes is ready in just 30 minutes and is super easy to prepare. Clean-up is easy too!
I am officially addicted to making dinner in a sheet pan. Not only are these meals quick and easy, but you also don’t have any pots and pans to clean up, which is a huge, huge plus in my book. In fact, you could probably eliminate most of the dishes completely if you use paper plates and plastic utensils, but that may be taking it a little too far. Or maybe not!
Usually, we’re not rushed on the weekends, but I spent the afternoon doing some fall clothes shopping with the kids, and I didn’t have a lot of energy left for cooking dinner when we got home. If you’ve ever shopped with teen girls, you’ll understand.
So last week, I made a one pan honey mustard chicken dinner that the family devoured in just a few minutes. And this week, I just changed flavors a little bit and used different veggies.
One of my kids loves barbecue-flavored anything, so I seasoned the chicken with a few spices, and then I slathered it with a mixture of honey and barbecue sauce. You can use any kind of barbecue sauce in this recipe, and you can even make your own. I was in a rush when I made this honey barbecue chicken, so I just used our favorite brand.
I also added some baby carrots and baby Yukon Gold potatoes. If you can’t find these potatoes in your local store, you can use baby white potatoes, instead.
Roasted carrots are awesome, and they have a natural sweetness that just about everyone loves. But, I couldn’t help drizzling some honey over the carrots just for some extra flavor.
Just before it was time to serve the sheet pan chicken and veggies, I added some butter and cheddar cheese over the potatoes. And then, I finished it off with a dash of fresh parsley. These steps are completely optional, friends, but you’ll love the added flavor and color!
How to Make Sheet Pan Honey BBQ Chicken Dinner
- 2 pounds chicken breasts sliced thin
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 1/2 teaspoon sea salt
- 1 teaspoon ground black pepper
- 3 tablespoons barbecue sauce
- 2 tablespoons honey
- 1 pound baby carrots washed
- 1 pound baby Yukon Gold potatoes sliced in half
- 1/2 cup shredded cheddar cheese
- 1 tablespoon butter
- Chopped parsley optional
- Preheat oven to 425
- Line a baking sheet with heavy duty aluminum foil, and spread olive oil over foil
- Arrange chicken, carrots and potatoes on pan
- Season with sea salt, pepper and garlic powder
- Brush chicken with honey and barbecue sauce
- Bake for 30 minutes or until juices run clear and chicken temperature is at least 165 degrees
- Sprinkle cheese over potatoes and carrots, and dot with butter
- Sprinkle with parsley, if using, and serve
