I know many families celebrate Mother’s Day by going out for brunch or dinner. Back when my oldest baby was born, we took her everywhere, including some nice restaurants. Of course, she was one of those happy, calm babies who rarely fussed –yes, they do exist! So, on my first Mother’s Day, we all went out for both brunch and dinner, and I was naive enough to assume that we would continue to observe this hallowed tradition each year.
As our family grew, we were blessed with our fair share of fussers and screamers, and I quickly learned that all children are not alike. I also learned that it was much easier and far more enjoyable to celebrate Mother’s Day by dining at home. For one thing, I didn’t have to worry about keeping all five kids happy, so I could actually enjoy the meal. If the kids were fussy, there was no one around to object! Plus, dining in was so much cheaper, especially since we have a large family.
Over the years, we’ve developed a Mother’s Day menu that pleases everyone, especially since major quantities of chocolate are involved! So, for those of you who prefer to dine at home, here are some quick and easy Mother’s Day meal ideas.
Double Chocolate Orange Pancakes
Don’t these pancakes look decadent? The combination of dark chocolate and orange is a fantastic way to start the day, and these are super simple to make!
If you’re looking for a light lunch or brunch salad, this hearty spring salad with chicken and bacon has a little something for everyone. Also, it’s virtually impossible to mess up a salad, so if cooking isn’t your strong point, this is the way to go!
Spicy Grilled Cheese on Rye
For something a little more daring yet casual, try this spicy grilled cheese sandwich. You can leave out the jalapenos on the kids’ sandwiches and serve a kicked-up version for the adults.
Chocolate Covered Strawberries
What’s not to like about chocolate covered strawberries? Melt, dip and eat! This sweet treat is also fun to make with your kids and can become part of your Mother’s Day tradition. Just remember to share them with your family!
This pie is perfect for warmer weather, and since it combines ice cream and a ready-made pie shell, it’s super easy to make. Plus the combination of mint and chocolate is irresistible!
